First of all you will need to test all of your processes and every branch of your processes.
We installed 7.3 in production last Sunday and we have experienced some performance issues. It seems like it is the database read/write to disk that is the problem. But we need to investigate this further.
If it is possible you should make a load test with many users testing at the same time and monitor the performance of the database server and I/O on disk.
