I think this is the way LDSD commits actions. You see much the same when creating a process in that the first action in the audit trail is often not the create. Other than writing a calcualtion try and pick off the nth task, I think one idea might be to swap the order of the tasks round so that the order of committment is what you actually want.
I tried swapping the tasks around like you suggested and this still did not work, so then I recreated them so that the task details I wanted in the reminder would now be in the latest created task regardless of where this task was in the process, if that makes sense, and this worked a treat.
