That doesn't sound right. Perhaps your database is waiting on a lock or something? I've personally never had an MDM between 7.4 and 7.5 take longer than an hour. I'd recommend stopping it, restoring your backup and starting again.

Whilst our database is being restored I am setting up a new instance via Configuration Centre pointing to the OOTB database. Should this Metadata Manager run quicker or around the same timeframe?
If you are pointing to a 7.5 OOTB you don't need to run an MDM at all against it but I understand that you probably just want to run a test. As the 7.5 OOTB already has any database changes applied then the MDM should be pretty fast.
You may just be experiencing this: When launching the MDM from configuration centre in 7.5 using the upgrade link the progress bar is not displayed.
To check if the MDM is actually completing or not check the log files that get created in the same folder the tps.config file lives (C:\ProgramData\Touchpaper\<framwork-name>).
Now I was able to see when it encountered an error to fix.
Now using 7.5 successfully!
