I feel your pain. I wish they had Windows 7, Windows 7 (x86) and Windows 7 (x64). Windows 7 would mean both OS and if you need to be specific you could choose the latter, but nope, I have to create two different templates for 32bit and 64bit.
....just to be clear I'm not having any problems with provisioning the CONFIGURE TARGET OS step.
My issue is with designating the TARGET OS of a provisioning template or provisioning script for a single OS type. When you do this, and you pretty much have to do this, you can't use it for multiple OS types. The result is that you have to maintain multiple copies of the same set of information because the Landesk Console isn't smart enough to grasp the fact that one set of actions can be successfully used across multiple platforms.
Oh sorry i think i was the post with unattend.xml example for WIn7 64 and x86.
