I'm not sure if you're going to be able to get a decent result for what you want since default browser is a user based setting / registry key.
You could check out the following registry key and add it to inventory using the custom data tool. Then when doing your query you'd want to add the logged in user most likely.
HKCU\Software\classes\.html (also exists in HKLM but wouldn't be accurate to the user level)
IE = htmlfile
Chrome = ChromeHTML
Firefox = FirefoxURL (I think)

Consider building a batch file that you call with something like a login script. This overcomes the issue of user rights.

So if you built a decent script called by login script (or some other user-based method) then you can get to HKCU data and send it to the server.
The biggest issues I see with this are that miniscan files get processed before normal inventory so do too much of this and you could impact standard inventory scanning response times (but user login shouldn't be too bad). Also, after you have allowed this data through (using Unknown Items in the inventory settings) you may also be impacted by the data being deleted by subsequent scans. Most of the time you will be fine, but occassionally if there is a full sync scan then this data will disappear so plan for it to be re-populated on a regular basis.
