My 1st thought was "why"?
I send all e-mail from "[email protected]" people rarely look anyways.
However, if you have some need to have different sending e-mail addresses, LPM has the ability to work with different e-mail accounts. You send an e-mil to a LPM listener and it could use different accounts to send out e-mail. I just can't think of a reason why you would need this.
reason for this is the need to get users reply to the email address as different team deals with reqeusts form different processes
I've been investigating this as well because of the different teams who deal with the incident/requests and changes.

Looks like you will have to upgrade though. The bit you want is on page 65 of the Whats New 7.4 Manual.
ReplyTo email address and Reply To Display name can be saved on the incident / change / Request record itself, but you need to populate it for each and every incident/ change / request your raise, or it will use the default as set by your outbound mail settings.
My thoughts were to set the default value for these rather than use the other methods suggested, but I've not got round to testing if this would work.
