Well, I find a certain workaround, I modified role for all analyst so they can't create task. It's working, but sadly we can still see the action, and it pop ups an error when they tried to create a task. I would prefer a way to desactivate this action, if anyone know a way to do it.
Remove this action from the process itself in Process Designer. This could be either visible in the flow or built-in in status.
BTW. You might not be able to deactivate the process when it's marked as default. You need to temporarly make default another one.

You need to temporarly make default another one. -> In matter of fact, I can desactivate it if I activate another process, but I still have the same problem as I need a process active. It just move the problem somewhere else.
Can you show me the actions when you see Create task or process diagram? Maybe they are configured within status like optional actions on Open status?
As well as the actions you can see on the process diagram there can also be "optional" actions which are set on each status.
To check which optional actions are available at a status:
1. Select a status on the diagram:
2. Go to the Properties panel and click the "..." button on the "Optional Action Instances" property:
3. Click the action you want to remove from the "Selected Action Instances" list and press the "<" button:
