We are getting very high CPU Utilization out of the Anti-Virus when scanning to the point that workstations and servers become unresponsive. I have been watching the High CPU alert cycle through my VMware Cluster all morning as each kicks off a scan. The server I am watching right now is literally a matter of life and death and is running 89% CPU and web services are not available. Is there a way to throttle the anti-virus scan rate?

To complete what leakcim78 told, this is usually due to the scan and you may need to identify what's the cause of it by removing 1 by 1 each protection (File Antivirus, Mail Antivirus, Web Antivirus, IM Antivirus, NetWork Attack Blocker, System Watcher).
If you have already identified which protection is the cause of your troubles, then you may need to do some exclusions like the ones explained in http://support.kaspersky.com/5927
