When you say manually...do you mean your requester selects an employee to terminate from a drop down list? Once selected you would like some information from that terminated employees profile record?
Pretty Much. Apart from the fact that this person would not yet be terminated. It would be for a soon to be terminated user. So yes, I've created a dropdown list where they can pick which employee's contract will end (or be ended) and that's the one I would need the information from.

If the data is in the employee record you can just pull it in to other fields on the request offering:
1. Add the Employee drop down list
2. Complete the Additional Fields section for the other field you require from the employee object
3. Map the required fields to text or label boxes as needed, use the trigger settings so once the employee is change the department will change with them
