This is configured from the 'Search' tab of the Admin interface for the associated business object.
In this instance, it would appear to be for the Profile.Employee BO
It should be noted that the preview is not accurate; I presume that only 1 field can be set as the primary.

So I did presume this was for the profile.employee business object - this may not actually be the case for you. First of all, I would ensure the correct business object search settings are being changed. Next, ensure you are choosing the correct field to display on the search preview. Confirm these by looking at the phone field on the associated form.
Assuming it is the employee BO, the Phone1 field (Frs_CompositeContract_Contact) is text - if you choose to index this, the search should work as desired.
