I don't see any reason why you should not be able to do what you're suggesting. It's been quite a while, but, as best as I can recollect, I've done exactly that before; especially in regards to the SQL 2000 to SQL 2005 effort.
I suspect all should go well.

The client I'm working with is huge and they have about 6 people on this project so it's moving at a very slow pace... not sure when I'll be able to provide feedback on how this goes!!
The one question I would have is why SQL 2005? Is it an existing server? 2005 reached end of life a couple of years ago now.
Good question... however this question was just for the beginning steps of the upgrade. Final product will be GMPE 2018.1 on 2012 R2 server using SQL 2014.
